Baked Apple Pie Oatmeal

Oatmeal is probably my all time favorite food. I like it every way I have tried it. It's good by itself, it's great when paired with fruit or chocolate and you can eat it warm or cold! What's not to love? This is one of my go-to meals in the fall and winter. I often will make it the night before and reheat it the next morning and it's just as good.

- 1 Small apple, peel removed and chopped up into bite size pieces.

- 1/3 cup old fashion oats

- 1/3 cup milk of choice

- 1 Egg

- 1 tsp. cinnamon

- 1 Tbsp maple syrup

- 1/4 tsp salt


  1. Set oven to 350.

  2. Spray a small cast iron skillet with cooking spray and place over med-high heat. While skillet is warming chop apple. Add chopped apple to the hot skillet and stir with a spatula allowing apple to brown on all sides.

  3. Combine remaining ingredients in a bowl and stir until well combined. Pour in the skillet with the apples.

  4. Bake 18-21 minutes. Serve warm or chilled.
